This is what I cook when I don't know what to cook
3 recipes that never disappoint in our household
This is how a conversation with my husband and daughter goes, about five times a week.
Me: “What do you want to eat?”
Daughter: “I don’t mind.”
Husband: Silence
Me: “What do you want to eat?”
Husband: “I don’t mind.”
Sound familiar? If you're rolling your eyes, you're not alone.
Yes, I’m the cook of the house but because, well, I’m a chef. But even chefs need a little inspiration sometimes. It would be lovely if those who are being cooked for offered up more than just “I don’t mind” if not to cook, then at least to spark an idea.
That said, this isn’t a story about fridge raids or throwing something together from leftovers. These aren’t recipes born from desperation. Quite the opposite.
These are the recipes that have made me who I am. The ones that put me on the map. They’re built on wholefoods, shaped by intention, and deeply rooted in my philosophy of food as nourishment, joy, and care. They’ve stood the test of time — the ones I come back to again and again, and the ones that have resonated with thousands of others.
Each dish is layered with flavour, love and purpose no cutting corners here, no cheat ingredients. Just the kind of food that fills you up in more ways than one.
There’s a chickpea omelette that’s become a breakfast hero in my kitchen. A whipped, dreamy cashew cheese I serve when I want to impress (or just treat myself). And a plant based burger possibly the best you’ll ever taste that holds its own at any summer table.
These are not afterthoughts. They’re my legacy dishes. And I’m so excited to share them with you.
Let’s get into it.
